Chickpea Curry Stuffed Peppers – Serves 4 people

Ingredients: 
  • 1 onion
  • 2 medium zucchini
  • 2 medium carrots
  • 1 cup of spinach
  • 4 fresh tomatoes
  • 1 red bell pepper
  • 1 can of chickpeas (drained & washed)
  • 1 can of coconut milk
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1 tsp coriander
  • 1 tsp cumin
  • 1 tsp dried chili flakes
  • 1 tsp coconut oil
  • Salt and Pepper
  • 4 large bell peppers (any colour) with flat bottoms so they stand up
Directions:

1. Sauté the diced onion in the coconut oil
2. Add the chopped zucchini, carrot, bell pepper and tomatoes and stir-fry for 2 minutes
3. Add the spices and stir in
4. Add the chickpeas and coconut milk, bring to the boil and simmer for 8-10 minutes
5. Add the spinach 2 minutes before serving
6. Put the whole peppers in an oven proof dish with tops and seeds  removed (save the tops)
7. Fill the pepper shells with the chickpea curry, put the top on and bake in the oven for approximately 10-15 minutes at 350˚F until the pepper is softer to touch (but still firm and rigid)
8. Serve with brown rice

Halibut Parcels – Serves 2

Ingredients:
  • 2 pieces of fish (Any kind of solid fish works for these, I have tried salmon, halibut, haddock, tuna and trout. Size is up to you)
  • 10 Heirloom cherry tomatoes
  • 1 carrot
  • 2 green salad onions
  • 10 baby potatoes
  • 2 celery sticks
  • 4 mushrooms
  • 1 small zucchini
  • 1 lemon
  • Fresh chopped parsley
  • Salt & Pepper
Directions

1. Parboil the potatoes until almost cooked
2. Chop the chosen vegetables (except tomatoes) into sticks
3. Once the potatoes are almost cooked, lay them into the centre of un-bleached baking parchment
4. Add the other vegetables on top
5. Sprinkle with salt and pepper
6. Pour approximately 1tsp of boiling water onto the vegetables
7. Lay the chosen fish on top add a few pieces of lemon and sprinkle with fresh parsley
8. Wrap up into a parcel and secure with a skewer as shown in the top left hand picture
9. Repeat with the second piece of fish
10. Bake in the oven at 350˚F for approximately 15-20 minutes (depending on the thickness of the fish
11. Remove from the oven, open the parcel and serve.
