Chicken Cold Cuts – A Recipe by Acupuncturist Yasaman Safarzadeh

As part of our social distancing series highlighting things our therapists were doing while at home, acupuncturist Yasaman Safarzadeh shared this recipe for Chicken Cold Cuts that she concocted while keeping her distance from others.
 
Dear BIA family and patients,
 
Hope you are all doing well in the midst of this pandemic. Here is a story of one of the things I was up to while Backs in Action was closed for in-person appointments. Hope you enjoy it. Take care and stay safe!
 
This quarantine has been very bittersweet. I have had so much free time on my hands that I literally didn’t know what to do with it. And so I started doing the things that have been on my to-do list for a very long time. I cleaned up all my drawers, read the books I wanted (and did more research on acupuncture and its effects on human body )and started baking and cooking like there is no tomorrow. The two most amazing things that I made was a chicken cold cut and bubble tea at home! I would like to share my chicken cold cut recipe with you guys since I think it’s pretty amazing and tasty!
 
I blended 5 chicken breasts (about 1kg of ground chicken breast would work best, otherwise cleaning the blender would be a big hassle) with 3 egg yolks, 150g flour, 2tsp salt, 2tsp black pepper, 5 garlic cloves,1 tsp paprika, a dash or sriracha and a 1/2 tsp mustard. I mixed them all together and then transferred them to 3 pre-oiled glass cups (you can also add in mushrooms or cheese if you would like to this mixture. If you want to add mushrooms, cut the raw mushrooms and cover them with boiling water for 3 minutes, then transfer them to cold water). After that, I made tinfoil lids for them and transferred the cups to boiling water inside a big pan (make sure the cups aren’t cold, otherwise the glass will break). Cover the lid of the pan and let them cook for 1.5 hours. Take the glass cups out and let them cool for a while, then bring the cold cut out and cut slices as thin as you would like. Then transfer them to the refrigerator and enjoy after it’s cold!
 
 
Now that the clinic is open again, I’m back again seeing patients as usual and making more chicken cold cut when I find the time.
